NIGIRI SUSHI - Hand formed ball of vinegar seasoned rice topped with a dab of wasabi and a thin slice of seafood. Served in pairs.

MAKI SUSHI Rolled sushi with different ingredients (seafood, vegetables,Rolled sushi with different ingredients (seafood, vegetables, or pickles) wrapped in the center of rice spread on a sheet of  nori (dried seafood).

TEMAKI SUSHI - Cone shaped hand rolls

SASHIMI - Fresh sliced fish

GARI - Tender, young ginger root pickled in seasoned vinegar. Always served with sushi. Gari’s unusual and subtle flavor cleanses and refreshes the palate

WASABI -Very hot, Japanese horseradish.

Ama-Ebi - Sweet shrimp, usually served raw.

Ebi - Shrimp.

Gyoza - Pan-fried and/or sautéed and/or steamed, stuffed wonton or other wrappers.

Hamachi - Yellowtail.
Ika - Squid.
Ikura - Salmon roe.
Kani - Crab meat.
Kurodai - Snapper.
Maguro - Tuna.
Ocha - Tea.
Oshinko - Pickled vegetables, usually cucumber. 
Otoro - Fattest tuna, from the lower belly.
Ponzu - Sauce made with Japanese citron.
Saba - Mackeral
Sake – 1) Rice wine or  2) Smoked salmon.
Shoyu  - Japanese soy sauce
Tako - Octopus.
Tamago – Eggs or Egg omelet sushi.
Tekka - Tuna, especially in a sushi roll. 
Toro - Fatty tuna or belly of the tuna, distinguishable as `Otoro', fattest, and `Chutoro', fatty.
Tataki – Seared and Thinly Sliced
Teriyaki - Broiled foods marinated in a sweet soy sauce.
Tonkatsu - A pork cutlet which is breaded, then fried. It is usually served with a sauce used specifically for tonkatsu and served on a bed of rice. It is very popular for lunch - it is quick and tasty.
Tempura - Seafood or vegetables dipped in batter and deep fried. Tempura refers to fried
foods coated with batter, as opposed to katsu, fried foods coated with bread crumbs.
Unagi maki - Eel sushi roll.
Uni - Sea urchin.
Yakinori - Toasted seaweed.
Yakitori - Skewer-grilled foods.
